Comprehensive and well-illustrated work, with contributions from specialists and trade experts, intended to offer a faithful record of all that is necessary for the successful conduct of business in baking, confectionery, and catering.

This is a very large six volume set "With Contributions from Specialists & Trade Experts." The books include wheat and other cereals, flour yeast bread making aeration. Confectionery, buns, scones, cakes icings and syrups pastes and pastries biscuits sweets. Ices, menu dishes refreshments catering bakery organisation, bakery fixtures, accounts, markets, legal regulations index and much more.

The author, John Kirkland was a lecturer and teacher of bread-making at the National Bakery School in London.

Boards: Fair - No dust jacket. Pictorial green cloth boards with gilt lettering to spine. Moderate rub wear and markings to boards with small stains

Spine: Fair - spine has small tears but is fully intact.

Overall: Good condition, Used.
